These cookies have a great chocolate flavor. A classic favorite around the holidays, but try making this recipe for any occasion and you will enjoy them a lot.
Chocolate Drop Cookies
1/2 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
3/4 teaspoon salt
1/4 teaspoon baking powder
1 1/4 cups sugar
1 stick unsalted butter, at room temperature
1 large egg
1 teaspoon pure vanilla extract
1. Whisk the flour, cocoa powder, salt and baking powder in a medium bowl. Beat the sugar and butter in a large bowl with a mixer until fluffy, about 3 minutes. Beat in the egg and vanilla. Stir in the flour mixture until just combined. Refrigerate until firm, 30 minutes.
2. Meanwhile, preheat the oven to 350℉. Line 2 baking sheets with parchment paper.
3. Scoop the dough into 1 1/2-inch balls and place about 2 inches apart on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are slightly firm, 12 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
